14 Day Meal Plan: January 6 - 20, 2012

I am happy to be back in the meal planning zone. Here is my 14 day meal plan for the 2 week period of January 6 to January 20. There is no particular order to how I plan to serve my meals because I have all of the ingredients necessary to make each of these meals in my fridge or pantry, amongst my fresh produce or in the freezer.



My plan is to make it to the 20th without having to step out to the grocery store, besides maybe buying some fresh dairy items like milk eggs and cheese. Just pay attention to the produce that you do have and use it before it spoils - and there is nothing wrong with using a tin of vegetables in a recipe or produce that has been flash frozen.

A lot of produce that you find in the freezer section of the grocery store is frozen immediately after harvesting to ensure that they retain all of the natural vitamins and minerals that make them so healthy. I use frozen veggies in soups and stews, stir-fries, etc.



I am also doing some big batch soup making. Cream of Broccoli, Curried Sweet Potato, Butternut Squash, and Potato and Leek with Bacon. I am going to portion and freeze the soup for go-to meals when we're in a hurry. Also its nice to have a nice hot bowl of soup when it's chilly outside.





14 Day Meal Plan:


Oven baked Pork Back Ribs with a spicy Jamaican Jerk rub. Blasted on high in the oven to achieve a crispy bark, and then basted in a homemade Chipotle BBQ sauce and slow roasted for several hours until fall-off-the-bone tender. Served with crispy sweet potato fries, and sauteed green beans.

Winter Beef Stew. A blend of hearty root vegetables, carrots, parsnips, onions, celery simmered with braised beef in a rich mushroom gravy. Topped with herbed dumplings.

Spicy Southwest Chicken Caesar Wraps. Chicken breast and leg pieces are glazed in a spicy Southwest BBQ sauce and slow baked until fork tender. The meat is then shredded and added to a flour tortilla, topped with crunchy romaine, sliced red onions, grated Parmesan and a creamy Caesar dressing. Then you roll it up and eat it!

Crunchy and Soft Beef and Bean Tacos. A plethora of taco fixin's - green onions, black olives, shredded cheese, lettuce, salsa, sour cream, diced tomatoes and jalapenos! Some like it hard, some like it soft ;) Nachos with cheese as well.

Grilled Peppered Beef Tenderloin. Breaking out the BBQ to grill up some hoisin glazed-peppercorn crusted beef medallions. Sliced thick-cut sweet potatoes and beautiful white asparagus sprinkled with shredded asiago. All grilled to perfection.


Soup Day! Thaw,and reheat one of the 4 variety of soup I previously made.  Topped with a selection of add-ins like homemade croutons, shredded cheese, snipped chives, sour cream, crumbled bacon, etc.

Asian 5 Spice Turkey Stir-Fry.  A blend of flash frozen stir-fry vegetables (bamboo shoots, water chestnuts, carrots, red pepper, baby corn, bean sprouts, sliced mushrooms and pearl onions) sauteed in a homemade stir-fry sauce seasoned with Asian 5-Spice powder. Served with steamed white rice.

Pulled Pork Panini's with Caramelized Onions. Using my tradition brining, dry-rub and glaze recipe; a pork shoulder is slow roasted until easily shredded with 2 forks. Served on sliced panini bread and topped with cheese and golden onions. Pressed to grill. Served with a side of soup previously thawed and reheated from my freezer stockpile.



Breakfast for Dinner. Pancakes, scrambled eggs with cheese, home fries, bagels, croissants, pea meal and maple bacon, and a fresh fruit platter. Yummy.

Maple Glazed Ham. Slow cooker maple glazed ham with homemade vegetable fried rice and frozen baby mixed vegetables. This meal is simple and plain and was requested by my youngest son who is 6.

Turkey Pot Pies. A turkey-stew mixture is ladled into aluminum pie tins and topped with puff pastry. The pastry is brushed in an egg-wash and baked until golden brown and the mixture is bubbly. I also make extras frozen in individual freezer bags, which I top with the puff pastry after thawing and before baking.

Calzones!! A variety of deli meats, cheeses and fresh veggies topped with a thick sauce, folded into a pizza pocket and baked until crisp and golden.



LEFTOVERS!!!! Using up any leftovers that I may have frozen from previous dinners, including pulled pork, turkey pot pies, soups and stews. Mostly single serving sizes, mixed and matched to suit every ones taste on that day.
