Bacon Cheeseburger Crock Pot Casserole



So this recipe is kind of a spin-off of the Hamburger Helper meal mix with the potatoes. I think it was potatoes stroganoff or something like that. I had a pound of ground beef and some baby new potatoes, and I wanted to spend some time in the garden today and not worry about dinner later. I started tossing in this and that, and this is what I've come up with.

Bacon Cheeseburger Crock Pot Casserole

Ingredients:

1 lb lean ground beef
6 slices of bacon, diced
1 large onion, diced
2 stalks of celery, diced
2 cups thinly sliced mushrooms
5-6 cups thinly sliced potatoes (about 6 medium potatoes)
2 cups shredded cheese (mozzarella, cheddar, etc)
1/2 cup grated parmesan cheese
1 can (10 oz) condensed cream of mushroom soup
1 soup can of water
2 tsp garlic powder
2 tsp italian seasoning
salt and pepper to taste


Directions:

In a large skillet brown ground beef and bacon until beef has browned and bacon has crisped. Drain of grease/fat and set aside. In a mixing bowl combine the soup, water, the spices and salt and pepper. Mix well.

In a 4-6 qt greased crock pot lay half of the potato slices followed by half of the onions, celery, mushrooms, ground beef/bacon mixture. Pour half of the soup mixture over the first layer and top with 1 cup of the grated cheese and 1/4 cup of the parmesan cheese.

Repeat the layers one more time, pouring the rest of the soup over the meat and then finishing again with the cheeses on the top.

Place the lid on the crock pot and cook on low for 4-5 hours. Do not stir. If you sliced the potatoes super thin, or on the thick side, you may need to adjust the cook time. Casserole should be ready when the potatoes are fork tender and the cheese on top has melted.

Serve with a nice salad and some fresh bread sticks or dinner rolls and you've got yourself a complete meal!
