Tortellini and Meatball Casserole

This recipe is super simple and only uses a few ingredients. I chose to complicate it by adding sauteed onions, peppers, garlic and mushrooms to the pasta sauce but you can omit those ingredients if you like. Also I hand-rolled my own meatballs, but you could use a bag of the frozen ones for simplicity sake.

Tortellini and Meatball Casserole

Ingredients:

One HALF bag or box of frozen meatballs** (should come about 60-80 per box, so you only need HALF that)
1 pkg frozen cheese filled tortellini (approx 500g bag)
3 cups prepared pasta sauce
1/2 cup cream cheese
1/2 cup Parmesan cheese
1.5 - 2 cups grated mozzarella cheese
1 tbsp Italian seasoning blend
1 tsp garlic powder
1 tsp onion powder
salt and pepper to taste

Directions:

Cook pasta until al dente. Drain and pour into the bottom of a 13x9 greased casserole dish. Arrange meatballs on top of the pasta. Drop cream cheese by spoonfuls scattered over the top of the meatballs.

Combine spices, Parmesan cheese and pasta sauce together and pour over meatballs and pasta. Sprinkle the grated cheese on top and bake in preheated 350 F oven for 45 minutes or until cheese is brown and bubbly and meatballs are cooked through.

**If you choose to hand roll your own meatballs, use one pound of ground beef, and cook and drain the meatballs on paper towel before adding them to the casserole dish. If you cook them raw the dish will turn out very greasy from the fat in the meat**
