Peach Cobbler

In the summer time, I found a great deal on baskets of peaches. I picked up a half dozen or so baskets, and set to preserving some. A girlfriend and I spent an afternoon making peach jam, peach butter and plain old peach preserves. I am down to my last couple of jars and I was inspired by these to make a cobbler. You could also use fresh sliced peaches, about 3-4 should do it. Peeled and pitted of course.



Peach Cobbler

Ingredients:

1/2 cup melted butter
1 cup granulated white sugar
1 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup milk
1 tsp of vanilla extract
2 cups peach preserves (or 3-4 fresh sliced peaches)
1 tsp cinnamon


Directions:

Preheat oven to 375 F.

Pour melted butter into a baking dish (11x7 or 8-inch square). In a large bowl, combine the sugar, flour, baking powder, and salt; and stir to blend. Pour in the milk and vanilla and mix until well incorporated. Pour the batter directly over the melted butter. If using fresh peaches, toss the peaches in 3 tbsp of sugar and cinnamon. If using canned peaches or peach preserves, omit the sugar, and sprinkle only the cinnamon over the peaches. Toss to coat. Arrange the peach slices over the batter.

Bake for 25-30 minutes, or until a toothpick inserted in the cake comes out clean. The top will be browned and the cake will begin to pull away from the sides of the dish.

Serve warm with whipped cream, yogurt, a little heavy cream, or a scoop of vanilla ice cream.
