Banana-Apple Loaf Cake




This is a spin-off of a tried and true recipe for banana muffins. I sometimes will add chocolate chips, nuts or raisins, but this recipe is just plain. Go ahead and toss in whatever add-in your family likes.

Apple-Banana Loaf Cake

Ingredients:

3 overripe bananas, mashed
1/3 cup melted butter
1 tsp vanilla extract
1/2 tsp ground nutmeg
1 tsp cinnamon
1/4 tsp salt
1 tsp baking powder
1 tsp baking soda
1.5 cups flour
1 egg, slightly beaten
1/2 cup brown sugar
1/2 cup white sugar
1 cup apple sauce


Directions:

Preheat oven to 350 F

In a large mixing bowl, combine bananas, apple sauce, sugar(s), egg, melted butter, cinnamon, nutmeg and vanilla. Mix well with wire whisk. Set aside. In another bowl, combine flour, baking soda, baking powder, and salt. Stir to combine.

Pour dry ingredients into wet ingredients and stir to combine, scraping sides of bowl occasionally to incorporate all of the flour. At this point you may stir in any additional add-ins.

Pour into greased loaf pan, an 8x8 or 9x9 square cake pan, or 11x7 oblong cake pan. Bake for approximately 25-35 minutes, or until toothpick inserted in the center of the cake comes out clean.

This recipe also yields 12 muffins, baked at 350 for 18-20 minutes.
