Brown Sugar Glazed Carrots

An easy vegetable side, and a kid-friendly dish as well. My boys love "carrot coins"...... The faint hint of orange adds a nice zip.

Brown Sugar Glazed Carrots

Ingredients:

6-8 large carrots, peeled and cut into 1/2 inch "coins"
1/2 cup packed brown sugar
1 tsp garlic powder
salt and pepper to taste
3 - 4 tablespoons butter
1 teaspoon grated orange zest
1 tablespoon orange juice

Directions:

In a medium saucepan add an inch or 2 of water to the bottom and boil carrots on medium high heat for about 3-5 minutes and drain and place in separate bowl.

In the same saucepan, melt butter and brown sugar. Add garlic powder, salt and pepper, orange juice and orange zest. Heat until sugar is dissolved and mixture is bubbly. Do not overcook or sugar will scorch and taste awful.

Add carrots to saucepan and cook for 5 minutes or until carrots are glazed and hot.
