Stuffed Chicken Parmesan






Who doesn't love a good chicken Parmesan? This recipe idea was inspired by a show I watched recently on the Food Network. I don't have all the exotic ingredients they had used, so I am just going to keep it simple and use what I have around the house today. I hope you enjoy.


Ingredients:

4 skinless boneless chicken breasts
4 tbsp olive oil
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
1/2 cup italian seasoned bread crumbs
3 cups tomato or pasta sauce
1 cup fresh packed basil leaves
salt and pepper to taste
1 tsp garlic powder


Directions:

With a small knife, cut a slit into the fattest part of the chicken breast to form a pocket. Repeat with the other 3 pieces and set aside.

In a small bowl; combine basil leaves 1/4 cup Parmesan and 1/4 cup of mozzarella cheese. Mix well. Stuff this mixture into the pocket you created in the chicken breast and seal with a toothpick. Repeat this process for the remaining breasts.

In another bowl, mix bread crumbs, garlic powder and 1/2 cup of Parmesan cheese; set aside. Rub half of the olive oil over each chicken breast with your hands and dredge into flour/cheese mixture.

Add the remaining olive oil to a pan and over medium-high heat, cook chicken for about 6-8 minutes, flipping the chicken halfway.

Pour half of the sauce over the bottom of a glass baking dish. Arrange chicken breasts on top of sauce. Top chicken with more sauce, and remaining Parmesan and mozzarella cheeses. Bake at 400 F for 15- 20 minutes. Serve with rice or pasta, a crusty french bread and side salad.
