Slow Cooker Challenge D9 - Ham & Cheese Stuffed Meatloaf













Who doesn't like meatloaf? Ok well I could probably give you a list a mile long, but thats not the point. Haha. I have decided to forgo the traditional onion soup and ketchup version for something a little more daring. After stuffing the meatloaf with ham and cheese, it is wrapped in foil to keep its shape and slow cooked for several hours. The result is an incredibly moist and flavourful roll that is sure to please even the most picky eaters in your house!


Slow Cooker Ham and Cheese Stuffed Meatloaf


Ingredients:

1 lb ground beef
1 medium onion diced
2 tsp Italian seasoning
1 tsp garlic powder
1 tsp Cajun seasoning
1 tbsp soy sauce
1 tbsp Worcestershire
1 egg
1 cup bread crumbs
1 cup shredded mozzarella cheese
4 thick cut slices black forest ham
1/4 cup barbecue sauce


Directions:

In a large bowl combine ground beef, onion, spices, soy sauce, Worcestershire sauce, egg and bread crumbs and mix well.

Place 2 large sheets of tinfoil one on top of the other on your work surface. Liberally grease with butter or margarine. Place meat mixture in center of foil and pat into a rectangle about a 6-7 inches across, about 11-12 inches long and approximately 1/2 an inch thick. (if you are using a slow cooker that is smaller than 5 quart capacity - you will have to alter the measurements of the rectangle or the log will not fit the diameter of the cooker)

Layer slices of ham leaving a 2 inch border around the sides of the rectangle. Sprinkle with cheese. Starting from the bottom and using the tinfoil as a guide, tightly roll up into a jelly roll style log. Brush the top and sides with barbecue sauce and transfer to a new piece of foil. Wrap tightly 2 layers of foil pinching sides and placing seam side down in a 5-7 quart slow cooker.

Cover and cook on low setting for 4-6 hours. Let cool for about 20 minutes while still wrapped in foil before removing from the foil to slice and serve.

do you just place the tinfoil in the slow cooker with nothing else? like a splash of water so it doesnt burn and stick to the bottom? this sounds so yummy and i wanna make it!
