Slow Cooker Challenge D5 - Easy Cheesy Hasbrowns w/ Bacon

This recipe originally called for the ham to be diced and incorporated into the hashbrown potatoes. I was skeptical as to whether or not one of my kids would eat it -- and since I know he LOVES ham; I decided to do the 2 separately. TWO slow cookers. Does that get me double points? LOL

Anyways.... here is the recipe for:

Easy Cheesy Slow Cooker Hashbrowns w/ Bacon


Ingredients:

1 package of frozen hashbrowns - (approximately 6 cups)
6-8 strips of bacon diced
1 can condensed cheddar cheese soup (10 oz)
1 container 500ml sour cream
1 8 oz container/package cream cheese
1 medium onion diced
1 cup frozen mixed baby vegetable blend (peas, carrots, beans, corn, etc.)
1 cup milk
2 cups shredded cheddar cheese ( can use any variety)
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon dried parsley
salt and pepper to taste


Directions:

In skillet over medium-high heat, saute bacon until crisp. Drain on paper towels and set aside.

Meanwhile in large bowl, combine diced onion with soup, milk, cream cheese, sour cream, vegetables, shredded cheese and spices. Mix well to combine.

Add hashbrown potatoes to bottom of slow cooker. Pour contents of cheese mixture over potatoes. Sprinkle with bacon. Toss to coat. Cook on lowest setting for 4 hours, stirring once. Great as an accompaniment to breakfast, or as a side to a variety of different entrees.
