Slow Cooker Challenge D12 -Taco Chili


Love tacos? Love chili? Why not have the best of both worlds and try out this recipe!! My son came home from school for lunch today and asked me if I was making tacos for dinner tonight, LOL! I said nope, Taco Chili! He said AWESOME! So at least I know one out of two boys will eat it :)

Slow Cooker Taco Chili


Ingredients:

2 cups chunky salsa (or 2 cups diced tomatoes)
1 small onion diced
2 stalks celery diced
1 bell pepper diced (any colour)
1 cup of corn (frozen or canned)
3 cups tomato sauce
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon cayenne pepper
1 package taco seasoning
1 cup water
1 lb of ground pork OR beef
1 can(540 ml) of 6 bean medley (red/white kidney beans, chick peas, romano beans, black eyed peas)

Directions:

In a skillet brown meat until no longer pink. Drain fat and return to pan. Add one cup of water and taco seasoning packet. Bring to a boil, and reduce heat to low and simmer for 5-10 minutes, or until the liquid has absorbed. Add meat to crock pot. Rinse beans, and add to pot with all of the remaining ingredients and spices.

Cover and cook on low for 4-6 hours. Top with shredded cheese, and/or sour cream if desired.
