Rustic Autumn Beef Stew


Well today I broke down and turned on the heat in the house. It was so chilly this morning - I felt like my toes were going to fall off! I wanted a hearty and warm comfort meal for tonight, and thought it would be nice to turn on the slow cooker and fill my house with the smell of beef stew.

There are many variations of stew, and this one has crushed tomatoes, an apple and a spice blend that I think you will enjoy.


Ingredients:

1 lb stewing beef, cut into 1 inch pieces
2 stalks celery chopped
1 medium onion diced
1 medium apple - peeled, cored and diced
3 large carrots - peeled and chopped
1 can (10 oz) whole mushrooms (with liquid -- can also use fresh and add 1/3 cup extra broth)
1/4 cup cider vinegar
2 tbsp Worcestershire sauce
2 tbsp soy sauce
4 cups beef broth
1 cup diced tomatoes (canned or fresh)
1 tsp garlic powder
1 tsp onion powder
2 tbsp pickling spice blend (tied in cheesecloth or spice bag)
* thickener * (2-3 tbsp corn starch with 2-3 tbsp water)

Directions:

Add all ingredients to Slow Cooker. Cover and cook on low for 6-8 hours or on high for 4. Remove spice bag at this point. Add *thickener* and replace lid and continue cooking for an additional 30 minutes or until desired consistency is reached. Adjust the amount of *thickener* if needed.
