Cheesy Spaghetti Pie


Not wanting to make the traditional spaghetti this evening, I was inspired by a recipe from the Kraft Canada website for a layered casserole using spaghetti and resembling a lasagna. Hope you enjoy!

Ingredients:

1 half package of spaghetti noodles
2 tsp butter or margerine
2 cups shredded mozzarella cheese
1/4 cup grated parmesan or romano cheese
2 eggs - slightly beaten
1 tsp garlic powder
1 tsp oregano
1 tsp thyme
1 tsp cayenne pepper or crushed chili flakes (optional)
salt and pepper to taste
2 stalks celery diced
1 small onion diced
1 green pepper diced
1 lb ground beef
1 jar or can prepared pasta sauce (680-710ml)
1 tub (500ml) 2% cottage cheese

Directions:

Cook and drain spaghetti. Stir in margarine, parmesan cheese and eggs, while spaghetti is hot. Form spaghetti mixture into a crust in a large rectangular glass casserole dish. Preheat oven to 350 degrees F (175 degrees C). In a skillet cook the beef, onion, green pepper, celery and spices. Drain off the fat and stir in the pasta sauce. Spread cottage cheese over the spaghetti crust and then add 1/2 cup of the grated mozzarella on top. Add the beef/sauce mixture and spread evenly. Add remaining mozzarealla cheese on top.

This dish can be made ahead and refrigerated. Rinse off the noodles in cold water and cool. Do not heat the sauce when adding to the beef and assemble the dish after all items have cooled -- as not to cook the egg or melt the cheese. Wrap in saran or tinfoil and bake when desired.

Bake at 350 degrees F (175 degrees C) for 20 minutes. Enjoy!
