I was looking for a way to make an Asian inspired dish out of the sweet potatoes I had sitting in my fridge. They were meant to accompany the previous blog "Hoisin Glazed Chicken Wraps" and continue on with the Asian theme of the evening. I had a giant jar of Asian 5 Spice blend -- Which in case you are unfamiliar is a combination of the following spices; Star Anise, Cloves, Cinnamon, Fennel Seeds and Sichuan pepper. I hope you enjoy this recipe.
Ingredients:
4 medium sweet potatoes, peeled and cut into chunks (1inch)
3 tablespoons olive oil
4 large garlic cloves, minced
1 tablespoon asian 5 spice blend
1/2 teaspoon kosher salt
1/2 teaspoon red pepper flakes
1 tsp grated or powdered ginger
Preheat oven to 450°F. In large mixing bowl, combine all ingredients and toss. Arrange potatoes in 13x9-inch baking dish. Place on top rack of oven and roast until tender and slightly browned, about 45 minutes. Serve warm or at room temperature.
