A Meal from Odds and Ends

Today I was looking through my fridge, and noticed several items that I needed to make use of before they went to waste. I had an acorn squash, 4 thick strips of bacon, a pink onion, 4 new potatoes, a pkg of crab meat, half a bag of prepared coleslaw (sans dressing)and 3/4 lb ground beef..... (uncooked, leftover from last nights tacos)

Here's what I came up with;

BBQ Style Meatloaf, Roasted Squash & Potato Bake, and Seafood Coleslaw

BBQ Style Meatloaf

3/4 lb lean ground beef
1 egg
1 pkg onion soup mix
1 1/2 cups bbq sauce (I used Jack Daniels sauce)
1/4 cup worcestershire sauce
1 pkg stovetop stuffing mix (original cornbread)
1 tbsp Club House Montreal Steak Spice

Combine ground beef, egg, soup mix, worcestershire, 1/2 cup bbq sauce, and steak spice into a large bowl and mix well. Add stuffing mix and continue mixing (with hands) until all ingredients are well incorporated. Press into large loaf style pan.

Bake @ 350 F for 40 minutes and pour away any grease that has accumulated around the sides. Add remaining cup of bbq sauce to top of meatloaf and continue baking for another 10-15 minutes, or until sauce is sticky and bubbly.

Let stand 10 minutes before serving.

Roasted Squash & Potato Bake

1 acorn squash peeled, seeded and cubed
4 medium sized new potatoes, peeled and cubed
4 strips of bacon
1 medium pink onion diced
1/2 cup butter
2 tbsp brown sugar
1/4 tsp each of ground ginger, nutmeg, and cinnamon
2 tsp dried rosemary leaves
2 cloves garlic minced
1 tsp salt
1 tsp pepper
2 tbsp parmesan cheese

Peel and cube potatoes and acorn squash and place in greased 8x8 glass casserole dish with tight fitting lid. Add diced onion, garlic and mix together. Add sugar, spices, salt and pepper and mix until evenly incorporated. Drop butter by spoonfuls randomly around casserole dish. Sprinkle with parmesan cheese, cover w/ lid and bake @ 350 for 1 hour, or until potatoes are fork tender and are golden in colour.


Seafood Coleslaw

3 cups prepared coleslaw mix (blend of purple and green cabbage and carrots)
1 cup shredded imitation crab meat
1/2 cup bottled coleslaw dressing
1/4 cup miracle whip
1 tbsp lemom juice
salt and pepper to taste
crushed red chilli flakes to taste

Add all ingredients into bowl and mix well. Let stand for one hour before serving for best flavour.
