Turkey N' Dumplin's

After Thanksgiving, Easter and Christmas, I usually have a TON of leftover turkey on hand.

I used to get suckered into hosting each event every year.... It was rotating between my divorced parents as neither one can stand to be in the same room with the other.

Now that my younger siblings have started to procreate and have families of their own..... the hosting of festivites are divided (somewhat evenly).

This is my "day-after-turkey-day" recipe. Enjoy. Modify the seasonings to your taste.

Hearty Turkey Soup with Dumplings

SOUP:

2 cups chopped turkey pieces
1 box (1L) chicken stock
1 onion chopped
2 stalks celery chopped
3 medium potatoes peeled and cubed
1 cup carrots chopped
1 cup (or can) kernel corn
2 tbsp poultry seasoning
1 tsp onion powder
1 tsp garlic powder
salt and pepper to taste

DUMPLINGS:

2 tsp baking powder
1 cup flour
2 tbsp oil (melted butter)
1 tsp salt

Chop vegetables and turkey and place in slow cooker. Add dry ingredients, and then add broth on top. Stir and cover. Cook on low for 6 hours or until veggies are tender and soup is simmering.
Mix ingredients for the dumplings into a bowl. Whisk. Drop by the tablespoonful on top of simmering liquid. Replace lid to slow cooker and cook for about 15 minutes on LOW.

Serve Promptly.
